A barefoot Quinn leads me over the rocks to look for sea beet, which tastes like salty spinach, and the carroty-tasting rock samphire that grows in tufts out of cracks in the rocks. ‘For me foraging has always been a part of sourcing food,’ he says, leaping up to pull a bit off. ‘I was taught what grows together goes together, so when you’re fishing for trout, the elderflower that grows near the water makes a great sauce.’
